Stirring is the operation which creates or accelerates the contact between two or several phases.

It is easy then to imagine the various cheese processing operations (or milk processing) requiring agitations : milk mixing, injection of starters, rennet, easier heat exchanges (heating, cooling), curd cutting…br>
Working principle :

Agitation is carried out by a component (stirrer) actuated in a rotary movement by a shaft connected to a mechanical energy source.

Its part is to set in motion a fluid (the content) composed of several phases in a vessel (container).

A stirrer is a hydro-machine and is designed as such.
