As a main component in the draining room, the table allows to store and drain the stacks of full trays during acidification.
It allows too to recover whey and drain it away.

TECNAL manual table is all made of stainless steel and its design takes account of various requirements :

height suitable to make the operators job easier when they turn the trays

suitable floor falls and careful construction to prevent any whey retention
